A few weeks ago, Alain Ducasse, wizened keeper of all French culinary tradition, met me in a walnut-walled 19th-century Bordeaux apothecary. There he sat, slightly slumped, his hair snowy white, his eyes peering over his glasses beneath wild eyebrows.
